Today I was wandering what to eat for lunch. I didn’t want to spend much time cooking so turning my head on the right I’ve seen our lemon tree. It has a history as a family member; it lived with us since I remember. If you want to know more about it here its story.
So I went to pick up a fresh lemon and on the way back I’ve seen some walnuts and garlic. A recipe is born! Well…….pasta with lemon is very common on the coast and the islands around Naples usually is made also with fresh herbs like basil, but I never seen it before with nuts that adds some texture and proteins to the dish.
I then open the drawer and found some linguine left in a pack. For the one who doesn’t know linguine is like spaghetti but flat, they work very well with oily sauces due to its shape. While I was about to cook I also thoughts well…….lemon, olive oil and garlic can only help to recover the touch of cold I have and a smile appeared on my face.
So here the recipe for Linguine with lemon sauce and walnuts;
Ingredients for one person:
80 gr of Linguine. Spaghetti will work also, don’t be picky.
1 untreated lemon
1 clove of garlic
An espresso cup of extra virgin olive oil
A handful of walnuts (any nuts will work)
Pepper and salt
Procedure:
1 Fill a pot with water and put it on a fire, you will need this for the pasta.
2 Grate the zest of the lemon, do it always this is gold.
3 Take the nuts out of the shell and chop the garlic as you like. I made it small.
4 When the water is boiling add salt, the water has to be salty don’t be shy. Add the pasta in it.
5 When the pasta is ready transfer it in a bowl saving the cooking water and add to the pasta the olive oil, the juice of half of the lemon, the garlic, some of the nuts and the zest and mix it properly. If it looks dry add some cooking water of the pasta.
6 Put it in plate and add some more zest, nuts and pepper is you like.
You’ve just made a delicious 10 minutes recipe.

Una ricetta di dieci minuti che ti renderá una stella della cucina: Linguine al limone
Oggi stavo pensando a cosa mangiare a pranzo senza passare molto tempo in cucina. Girando la testa a destra ho visto il nostro albero di limoni. Un albero che é un membro della nostra famiglia; ha vissuto con noi da quando mi ricordo. Se vuoi saperne di più qui la sua storia.
Così sono andato a prendere un limone fresco e sulla via del ritorno ho visto delle noci e dell’aglio. È nata una ricetta! Hmm…….la pasta al limone è molto comune sulla costa e nelle isole della Campania. Di solito viene preparata anche con erbe fresche come il basilico, ma non l’avevo mai vista con le noci che aggiungono consistenza e proteine al piatto.
Poi ho aperto il cassetto e ho trovato delle linguine rimaste. Per chi non sá le linguine sono come gli spaghetti ma piatte, per la loro forma si sposano molto bene con salse oleose. Mentre stavo per cucinare ho anche pensato bene…….limone, olio d’oliva e aglio possono solo aiutare a recuperare il tocco di raffreddore che ho, a qual punto un sorriso è apparso sul mio viso.
Ecco quindi la ricetta delle Linguine al limone e noci;
Ingredienti per una persona:
80 gr di Linguine. Anche gli spaghetti vanno bene, non essere pignolo/a.
1 limone non trattato
1 spicchio di aglio
Una tazzina da caffè di olio extravergine di oliva
Una manciata di noci (qualsiasi tipo andrà bene)
Pepe e sale
Procedura:
1 Riempite d’acqua una pentola e mettetela sul fuoco, vi servirà per la pasta.
2 Grattugiate la scorza del limone, fatelo sempre è oro.
3 Togliere le noci dal guscio e tritare l’aglio a piacere. Io l’ho fatto piccolo.
4 Quando l’acqua bolle aggiustare di sale e calate la pasta.
5 Quando la pasta è pronta trasferitela in una ciotola conservando l’acqua di cottura e aggiungete l’olio d’oliva, il succo di metà limone, l’aglio, alcune noci e la scorza e mescolate bene. Se risulta asciutta aggiungete un pò d’acqua di cottura della pasta.
6 Impiattate e aggiungete ancora un po’ di scorza, noci e pepe a piacere.
Hai appena preparato una deliziosa ricetta di 10 minuti.
